Selection of parcels identified and chosen for their unique characteristics within our
single vineyard.

WINERY
Fermentation in oak barrels, which are opened for filling and then sealed again; the entire
fermentation process is carried out with the barrel laid on its side, allowing manual
punch-downs and rotation. Once fermentation is complete, the barrels are opened again
for emptying. They are then sealed once more to begin aging the resulting wines.
Aging: in French oak barrels for 12 to 14 months.

TASTING NOTES
Deep, vibrant violet-red color with floral and ripe black fruit notes. Balanced and elegant,
with smooth tannins and a persistent finish.
Excellent aging potential.
Suggested pairings: tuna with peppers, roasted pork leg, goat, lamb, duck magret, Gouda
cheese.
